MAKING MOTHER SAUCES

This is a two part class that will cover the preparation of the mother sauces. This will be a demonstration class in which Chef Matt will show the preparation and also make a dish featuring each sauce. You may choose to attend one or both classes.

Mother Sauces part one, sauces covered: Veloute Hollandaise Brown sauce (demi glace)

Mother Sauces part two, sauces covered: Bechamel Espagnole Vinaigrette (basic dressing)
